Hold it to swing the pestle through its arc, then let go at the right moment to lob a cardamom pod into the mortar bowl that shares its colour. Land two pods before your strikes run out and the rung clears; miss the bowl and the pod goes to the stray pile. Gauge Read opens a tray of loose peppercorns. Judge the heap by eye, then turn the brass gauge ring with two fingers — or step it with plus and minus — until the reading matches your count, within the rung's stated allowance. Land inside that allowance and the rung is done. Both counters track cleared rungs and marks earned, with a scrub bar to jump back to any rung already reached. A single one-time Grinder Stamp opens the expert twist tier — rungs forty-nine on and fifty-five on — where bowls swap colour and the tray asks for two or three reads at once.
