MILL LINE BAY Open seeded extraction paths: stone mill with hydraulic press, hammer crusher with two-phase or three-phase decanter, or small-batch disc mill. Lock paste-vessel working capacity and target batch size with clear layered vessel diagrams so every run fits the line you will actually use. FRUIT LOT CARDS Build each lot from the offline Greek cultivar library. Set harvest maturity on a tactile 0–7 color index strip, enter field fruit temperature and lot weight in kg, and flag early-harvest agoureleo versus standard oil intent. Your inputs drive every gate and forecast downstream. MALAXATION BENCH Use dual sliders for minutes and paste temperature. Watch live quality gates for bitterness and pungency retention, emulsion risk, and cooked-paste warning bands, with gradient quality arcs and haptic cues at safe Hellenic cold-extraction ceilings.
